Ralph Schelling’s Vegi Surprise

So this Ralph Schelling comes with an impressive resume, having cooked at prestiguous restaurants all over the world. He was in Zurich for a while and tried his hand at a popup declaring that it’s only for City slickers with balls (cojones). Interesting thing was that it was a vegetarian show case.
The array of dishes and appetizers was prettly dazzling a showcase of techniques and some surprising products. The best single dish was certainly the Hot Dog. It had all the elements one would expect, the tangy BBQ sauce gave it a nice little kick. Also nice (a tad too salty) where the Churros served as part of the appetizers. Also high notes for the use of Wiediker Scheinquitte, something which was served with the Foie Gras. As with all Fake Foie Gras I have had, it’s always a nice try but never compares to the original, so why even bother ? The only thing I’d call out, that there were no actual Cojones in the dish, that would have been daring – serving grilled balls to a group of vegetarian diners… But asides from that, Ralph delivered.
